WHSYC Halibut Walt-Fredo
1 C Broccoli flowerettes, cut small
½ C onion, diced
2C (dry) egg noodles or similar pasta
12 oz alfredo sauce
½ C white wine
¼ C butter
¼ lb soda crackers. crushed
2 lb halibut filet
Cook pasta separately. Drain.
Layer in a casserole broccoli, onion, and pasta. Pour alfredo sauce over pasta. Drizzle wine over the top and lightly mix until sauce sinks through the mixture. Arrange halibut filets to cover the top.
Preheat oven to 350.
Bake casserole at 350 degrees for 25 minutes. While baking, lightly sauté butter and soda crackers until crackers start to brown. Turn off heat and set aside.
5 minutes before serving, sprinkle crackers over the halibut. Bake at 400 degrees for 5 minutes. Serve.
Options: Vary the vegetable. Add ½ C smoked salmon or bacon crumbles to the pasta mix. Use cacciatore sauce and red wine (then called WHSYC Halibut Walts-iatore). Add garlic or parmesan cheese to the crackers. Use rockfish.
